Afghan Eggs

Ingredients

  • 4 Eggs (1 whole, 3 whites)
  • 2 Tomatoes, sliced
  • 1 Shallot, halved and sliced diagonally
  • handful of fresh Coriander, chopped
  • salt
  • pepper

 Method

  1. Heat a Teflon pan. Add the sliced of tomato and shallot. Cook until tender
  2. Drop in the whole egg plus 3 egg whites (only use 1 yolk). Sprinkle with coriander and season with salt and pepper
  3. Cook for 3-4 minutes until done
  4. Serve immediately
