Asparagus Frittata


  • 4 eggs (1 whole, 3 whites)
  • 1 bunch fat asparagus
  • handful of parsley finely chopped
  • 1 chili chopped finely (optional)
  • salt
  • pepper


  1. Preheat oven to 200°C
  2. Separate egg whites from yolks (only use 1 yolk)
  3. Remove ‘woody’ stalks from asparagus
  4. Cut asparagus into diagonal strips
  5. Place the eggs in a bowl. Whisk briskly. Add the asparagus, parsley, chili, salt and pepper. Mix together.
  6. Place in a small oven-proof baking dish
  7. Bake in oven for about 20 minutes

NOTE:  Can use Spinach instead of Asparagus in which case add a clove of lightly fried garlic and parsley
