Asparagus Salad

Asparagus has a high ‘respiration rate’ – that means it goes off quicker than other vegetables – three times faster than lettuce or tomatoes. It needs to be eaten within 48 hours of purchase.



  • 4– 5 Asparagus spears
  • 1 clove Garlic, minced
  • 1 tsp Chili flakes (optional)
  • 1 Tbsp Parsley, chopped
  • juice of ½ Lemon
  • salt
  • pepper


  1. Steam the asparagus in boiling water for 2 - 3 minutes. Remove from the heat, strain and refresh in a bowl of iced water to stop the cooking process
  2. After a few seconds strain and place in a bowl
  3. Mix the rest of the ingredients in a jar. Shake and season to taste.
  4. Toss together. Serve
