Ingredients
Tomato Soup
2 Tomatoes, pureed [see Skinny Tomato Puree recipe]
100ml Skinny Chicken Stock
Meat Balls
100g lean Beef mince (can substitute with lean veal or chicken mince)
1 Tbsp fresh Parsley (finely chopped)
1 clove Garlic, minced
salt
pepper
Method
- Follow the Skinny Tomato Puree recipe.
- Put the tomato puree in a pot with the Skinny Chicken Stock. Bring to the boil. Simmer for a minute. Then season to taste
- Prepare the meat balls - mix the beef mince, parsley, garlic, salt and pepper in a bowl. Mix thoroughly then make 4 or 5 little balls from the mixture
- Dry fry the meat balls in a Teflon pan on medium heat turning to brown on all sides
- Put the meat balls in the soup, garnish with parsley and serve hot
