Ingredients
100g lean Beef steak, cut into 2cm cubes
2 cloves Garlic, minced
½ tsp Thyme
juice of 1/2 Lemon
2 Tbsp Skinny Vegetable Stock
8 cherry Tomatoes
1 tsp Basil finely chopped
salt
pepper
2 bamboo skewers
Method
- Soak the bamboo skewers in water
- Marinate the beef for 30 minutes in garlic, thyme, lemon juice, salt and pepper
- Thread the beef alternately with the tomatoes on 2 bamboo skewers
- Place in a Teflon double pan. Grill on each side to brown the meat
- Close lid and cook on low heat with a Skinny Vegetable Stock for 5 minutes or until cooked
- Garnish with basil
