Ingredients

250ml Skinny Chicken Stock

100g lean Chicken breast

1 large Tomato, finely diced

½ tsp Chili powder

½ tsp Paprika

½ tsp Cumin

1 Tbsp Garlic, minced

1 Tbsp Parsley, finely chopped (can substitute with basil)

1 Jalapeno pepper, chopped

pinch Thyme

salt

pepper

Method

  1. Put the tomato and garlic in a Telfon pan, Cook on medium heat till aromatic (about 4 - 5 minutes)
  2. Add Skinny Chicken Stock and bring to the boil
  3. Reduce heat to a simmer. Add chicken breast, herbs and spices. Simmer for about 10 minutes till meat is cooked through
