Chicken Ball Soup

Chicken mince tends to dry out when fried without oil (necessary to comply with P1 Skinny Rules), so this is a good way to eat them.

Chicken Ball Soup

Ingredients

Chicken Balls

  • 100g lean Chicken mince
  • 1 Tbsp Shallot, chopped
  • 1 Tbsp Garlic, minced
  • 1 Tsp Paprika
  • ½ Tsp Fennel powder
  • salt
  • pepper

Soup

  • 250ml Skinny Chicken Stock
  • 1 Lemongrass stalk, bruised
  • 1 – 2 cups Bok Choy (can substitute with Choy Sum, Spinach, Lettuce or Cabbage)
  • 1 Tbsp wheatless Tamari OR Braggs Liquid Aminos (‘soy’)
  • juice of 1/2 Lemon (or 1 Lime)

Method

  1. Heat the stock, lemon juice and lemongrass in a pot. Bring to the boil
  2. In the meantime mix the ingredients for the chicken balls in a bowl and form into 5 little balls
  3. Put the chicken balls and bok choy to soup mix. Reduce heat to a simmer and cook for about 6 or 7 minutes
  4. Add ‘soy’ to taste
  5. Remove lemongrass and serve hot
