Chicken Ball Soup
Ingredients
Chicken Balls
- 100g lean Chicken mince
- 1 Tbsp Shallot, chopped
- 1 Tbsp Garlic, minced
- 1 Tsp Paprika
- ½ Tsp Fennel powder
- salt
- pepper
Soup
- 250ml Skinny Chicken Stock
- 1 Lemongrass stalk, bruised
- 1 – 2 cups Bok Choy (can substitute with Choy Sum, Spinach, Lettuce or Cabbage)
- 1 Tbsp wheatless Tamari OR Braggs Liquid Aminos (‘soy’)
- juice of 1/2 Lemon (or 1 Lime)
Method
- Heat the stock, lemon juice and lemongrass in a pot. Bring to the boil
- In the meantime mix the ingredients for the chicken balls in a bowl and form into 5 little balls
- Put the chicken balls and bok choy to soup mix. Reduce heat to a simmer and cook for about 6 or 7 minutes
- Add ‘soy’ to taste
- Remove lemongrass and serve hot
