Chinese Spinach Egg Soup

Chinese Spinach Egg Soup


  • 1 Century Egg (皮蛋), diced
  • 1 Salted Egg Yolk (咸蛋黄)
  • 2 egg whites
  • 1 cup Chinese Spinach (Amaranth 苋菜)
  • 2 cups Skinny Chicken Stock
  • 2 cloves Garlic, minced
  • 3 slices Ginger, shredded
  • 1 small red Chili, seeds removed and sliced
  • salt
  • pepper


  1. Sauté garlic, ginger, chilli and salted egg yolk till fragrant
  2. Stir in the Chinese spinach. Fry for a minute or two until the leaves soften
  3. Add the chicken broth and bring to boil
  4. Add the egg whites and simmer for 10 seconds
  5. Turn the heat off. Add the century egg and salted egg yolk. Season to taste then transfer to a bowl and serve hot

NOTE: Century egg is also known as a preserved egg, hundred-year egg, thousand-year old egg and millennium egg. Century and salted eggs can be purchased in Asian speciality food stores.
