Cottage Cheese Arugula Apple Salad
Ingredients
- 100g Skim Milk Cottage Cheese
- 1 bunch Arugula
- 1 green Apple, sliced
- squeeze of Lemon juice
- salt
- pepper
Method
- Place the cottage cheese in a mixing bowl. Toss in the arugula and diced apple. Mix well
- Drizzle lemon juice, salt and pepper over the top and serve cold
NOTE: If you have the Apple on the side, Arugula can be substituted for steamed Asparagus, Broccoli, raw or cooked tomato, raw or cooked Cucumber. Add shallot and fresh herbs - Dill, Chives etc. to change it up.
