Cottage Cheese Arugula Apple Salad

This is a complete meal. Just add a grissini stick.


Cottage Cheese Arugula Apple Salad


  • 100g Skim Milk Cottage Cheese
  • 1 bunch Arugula
  • 1 green Apple, sliced
  • squeeze of Lemon juice
  • salt
  • pepper


  1. Place the cottage cheese in a mixing bowl. Toss in the arugula and diced apple. Mix well
  2. Drizzle lemon juice, salt and pepper over the top and serve cold

NOTE: If you have the Apple on the side, Arugula can be substituted for steamed Asparagus, Broccoli, raw or cooked tomato, raw or cooked Cucumber. Add shallot and fresh herbs - Dill, Chives etc. to change it up.
