Ingredients
250ml Skinny Chicken Stock
1 Cucumber, roughly chopped
1 clove Garlic, minced
1 generous bunch Mint leaves, remove stalks and chop
Parsley to garnish
salt
pepper
Instructions
- Add all the ingredients into a pot. Bring to the boil.
- Reduce heat and simmer for 10 minutes. Cool
- Pour into a blender. Blend till smooth
- Serve either hot or cold with parsley garnish
