Ingredients

250ml Skinny Chicken Stock

1 Cucumber, roughly chopped

1 clove Garlic, minced

1 generous bunch Mint leaves, remove stalks and chop

Parsley to garnish

salt

pepper

Instructions

  1. Add all the ingredients into a pot. Bring to the boil.
  2. Reduce heat and simmer for 10 minutes. Cool
  3. Pour into a blender. Blend till smooth
  4. Serve either hot or cold with parsley garnish
