Ingredients

100g white Fish fillet – remove bones

1 Grissini stick OR Melba toast, crumbled

1 tsp Coriander, chopped (can substitute with basil)

1 red Chili, finely chopped

1 Tbsp garlic minced

½ Egg white

1 tsp wheatless Tamari OR Braggs Liquid Aminos (‘soy’)

Method

  1. Lightly steam the fish fillet, remove from heat, cool slightly
  2. When cool enough to handle, flake the steamed fish into a bowl and add crumbled grissini, garlic, chili, coriander, egg white and seasoning. Mix it all together thoroughly
  3. Use a soup ladle to press the mixture to form one fish cake
  4. Dry fry in a Teflon pan till slightly brown, turn once and brown the other side. Handle it delicately otherwise it will fall apart
  5. Serve on a plate with a little 'soy' and a steamed vegetable such as asparagus, bok choy, choy sum or spinach

NOTE: DO NOT eat an extra Grissini stick or Melba toast with this meal.
