Is it possible to go past Garlic Prawns?


Garlic Mint Prawns


  • 100g Prawns, de-veined and shelled
  • 1 cup Skinny Chicken Stock
  • 1 Tbsp Mint, chopped
  • 1 clove Garlic, minced
  • 1 Grissini stick or Melba toast, crumbled
  • juice of ½ Lemon
  • salt
  • pepper


  1. Preheat the oven to 230°C (450°F)
  2. Mix the Skinny Chicken Stock, garlic and mint in a bowl
  3. Place the prawns in a baking dish and cover with the chicken stock mixture
  4. Sprinkle the crumbled grissini stick or Melba toast over the top, and season with salt and pepper
  5. Bake uncovered for 10 minutes
  6. Serve with a squeeze of fresh lemon juice

NOTE: The Prawns can be substituted with Crab or Lobster.
