Garlic Mint Prawns
Ingredients
- 100g Prawns, de-veined and shelled
- 1 cup Skinny Chicken Stock
- 1 Tbsp Mint, chopped
- 1 clove Garlic, minced
- 1 Grissini stick or Melba toast, crumbled
- juice of ½ Lemon
- salt
- pepper
Method
- Preheat the oven to 230°C (450°F)
- Mix the Skinny Chicken Stock, garlic and mint in a bowl
- Place the prawns in a baking dish and cover with the chicken stock mixture
- Sprinkle the crumbled grissini stick or Melba toast over the top, and season with salt and pepper
- Bake uncovered for 10 minutes
- Serve with a squeeze of fresh lemon juice
NOTE: The Prawns can be substituted with Crab or Lobster.
