100g lean Beef steak, cut into 2cm cubes

1/2 cup Skinny Vegetable Stock

1 Shallot, chopped

1 tsp Turmeric

juice of 1 Lime



1 cup frozen spinach

handful Parsley, finely chopped

handful Coriander, finely chopped

1 Tbsp Chives, finely chopped

1 tsp Fenugreek seeds, finely chopped


  1. In Teflon pan on medium-low heat, cook turmeric and shallots for a few minutes with a little Skinny Vegetable Stock
  2. Add meat and brown on all sides
  3. Add water, lime juice  together with spinach, parsley, coriander, chives and fenugreek. Reduce heat. Season to taste. Cover and simmer gently for 10 minutes
  4. Serve hot
