Ingredients
100g lean Beef steak, cut into 2cm cubes
1/2 cup Skinny Vegetable Stock
1 Shallot, chopped
1 tsp Turmeric
juice of 1 Lime
salt
pepper
1 cup frozen spinach
handful Parsley, finely chopped
handful Coriander, finely chopped
1 Tbsp Chives, finely chopped
1 tsp Fenugreek seeds, finely chopped
Instructions
- In Teflon pan on medium-low heat, cook turmeric and shallots for a few minutes with a little Skinny Vegetable Stock
- Add meat and brown on all sides
- Add water, lime juice together with spinach, parsley, coriander, chives and fenugreek. Reduce heat. Season to taste. Cover and simmer gently for 10 minutes
- Serve hot
