Ingredients

Kofta Balls

100g lean Beef mince

2 cloves Garlic, minced

½ tsp Chili powder

1 tsp Coriander leaves, finely chopped

1 tsp Mint leaves, finely chopped

Curry Sauce

2 Tomatoes roughly chopped

1 cup Skinny Vegetable Stock

2 cloves Garlic, minced

1 Shallot, chopped

1 tsp Turmeric

½ tsp Ginger powder

½ tsp Cumin

½ tsp Cardamom

½ tsp Cinnamon

pinch Clove

Method

  1. In a blow, mix the beef mince, garlic, chili, coriander, mint and salt
  2. Form the mixture into 5 little Kofta balls
  3. Cook the curry sauce ingredients on medium heat till aromatic and the tomato is soft - about 6 -7 minutes
  4. Stir in the Skinny Vegetable Stock, bring it to a boil then reduce the heat to a simmer and add the Kofta balls. Simmer for about 10 minutes till meat is cooked through
  5. Serve
