Ingredients
4 Eggs (1 whole, 3 whites)
1 large Onion, diced or cut in fine rings
1 Tbsp Curry powder
salt
pepper
Parsley garnish
Instructions
- Preheat your oven to 200ºC (400ºF)
- Finely chop the onion. Dry fry in Teflon pan till quite brown
- Separate egg whites from yolks (only use 1 yolk)
- In a mixing bowl add the eggs, fried onion, curry powder, salt and pepper. Mix together with a fork briskly
- Place in a small Pyrex baking dish
- Bake in oven for about 20 minutes
- Serve hot garnished with parsley
