Poached Bok Choy Prawns
Ingredients
- 100g Prawns, peeled and deveined (can substitute with white Fish fillet)
- 1 clove Garlic, minced
- 1 red Chili, de-seeded and chopped finely
- 1 stork Lemongrass, bruised
- 1 Shallot, halved and sliced diagonally
- 2cm Ginger, julienned
- handful of Coriander leaves (can substitute with Basil)
- juice of 1/2 Lemon (or 1 Lime)
- 1 - 2 cups Bok Choy or Choy Sum
- 1 Tbsp wheatless Tamari OR Braggs Liquid Aminos ('soy')
- pepper
Method
- Preheat the oven to 180°C (350°F)
- Place foil shiny side out. Lift the edges of the foil so ingredients don't run out.
- Lay a bed of bok choy leaves, then lemongrass, ginger, garlic, shallot, chili, coriander, prawns and soy
- Seal the edges of the foil to form an air-tight package
- Place in the oven for 15 minutes
- Remove from heat. Open foil and serve
