Prawn Red Cabbage Mint Salad

Ingredients

  • 100g Prawns, peeled and de-veined
  • 1 cup red Cabbage, finely shredded
  • 1 Shallot, finely chopped
  • 1/2 cup Mint leaves
  • 1 Chili, de-seeded and finely chopped
  • 1 tsp Mustard powder
  • juice of ½ Lemon
  • salt
  • pepper

Method

  1. Steam the prawns for 2 – 3 minutes
  2. Set aside to cool on saucer
  3. Toss the red cabbage, shallot and mint in a mixing bowl
  4. Prepare dressing of mustard, lemon juice, chili, salt and pepper in a jar. Shake well.
  5. Dress the salad. Toss and serve warm
