Description

Prawns Poached in Tomato

Ingredients

  • 100g Prawns, shelled and de-veined
  • 2 Tomatoes, roughly chopped
  • handful Basil leaves, chopped finely
  • juice of 1/2 Lemon
  • salt
  • pepper

Method

  1. Stew tomatoes, basil salt and pepper on low heat till soft
  2. Put prawns and lemon juice into the tomato. Stew for 3 minutes or until cooked
  3. Take off heat and allow to rest
  4. Season to taste and serve hot

NOTE: Be careful not to overcook seafood as it continues to cook after the heat is turned off.
