Prawns Poached in Tomato
Ingredients
- 100g Prawns, shelled and de-veined
- 2 Tomatoes, roughly chopped
- handful Basil leaves, chopped finely
- juice of 1/2 Lemon
- salt
- pepper
Method
- Stew tomatoes, basil salt and pepper on low heat till soft
- Put prawns and lemon juice into the tomato. Stew for 3 minutes or until cooked
- Take off heat and allow to rest
- Season to taste and serve hot
NOTE: Be careful not to overcook seafood as it continues to cook after the heat is turned off.
