Red Cabbage Mint Coriander Salad

According to a Danish study with over 57,000 subjects, fish and cabbage are among 6 types of foods a that prevent Type 2 Diabetes



1 cup red Cabbage, finely shredded

2 Tbsp Mint, finely chopped

2 Tbsp Coriander, finely chopped (can be substituted with basil)

flesh of ½ Orange cut in segments (can be substituted with ¼ grapefruit)

juice of ½ Orange (or ¼ Grapefruit)

1 tsp Ginger juice




  1. Put the cabbage, orange segments, mint and coriander in a bowl and mix by hand
  2. Prepare the dressing of orange and ginger juice salt and pepper in a jar, shake well
  3. Dress and toss the salad
  4. Serve


NOTE: Goes well with chicken and fish
