Seared Chicken Breast with Apple Ginger Sauce
Ingredients
- 100g lean Chicken breast
- salt
- pepper
- Parsley garnish
Sauce
- 1 Apple
- 1 tsp juice of grated Ginger
Onion Rings
- 1 Onion, finely sliced in rings
Instructions
- Cut and core the apple
- Put water in a steamer and place the apple pieces in and cook for about 7 – 8 minutes till soft
- Put steamed apple and ginger juice in a blender – give it a quick blitz
- In a Teflon pan on medium-low heat dry fry the chicken breast, turning to brown both sides – about 7 - 8 minutes
- In the meantime, in a separate Teflon pan, dry fry the onion rings till dark brown. Cooking this way causes caramelization of the sugars in onion which results in a delightful sweet nutty flavor
- When cooked, remove the chicken breast from the heat and allow to rest on a saucer. After a couple of minutes, slice the chicken breast into even slices
- Place the apple ginger sauce on the bottom of the plate, lay the chicken pieces on top and garnish with parsley
- Place the onion rings around the chicken
- Season and serve hot
