DIY Skinny Cottage Cheese – buy SKIM milk (NOT calcium-enriched).


DIY Skinny Cottage Cheese


  • 2l Skim Milk (Low Fat Milk must be used – don’t use ‘calcium enriched’ as it becomes gritty)
  • 2 Tbsp Lemon Juice
  • salt
  • pepper


  1. Bring milk to the boil
  2. Turn the heat off just as it is about to froth over
  3. Immediately add the lemon juice and stir. The curds will separate from the whey immediately
  4. Leave for about 5 minutes till cool enough to handle
  5. Strain through cheese cloth or sieve
  6. Weigh meal portions of 100g – you should get about 2 portions from this quantity
  7. Serve cold

NOTE: The whey can be drunk as a beverage (a good source of protein for people who are vegetarian) OR used to poach fish or chicken.
