DIY Skinny Cottage Cheese
Ingredients
- 2l Skim Milk (Low Fat Milk must be used – don’t use ‘calcium enriched’ as it becomes gritty)
- 2 Tbsp Lemon Juice
- salt
- pepper
Method
- Bring milk to the boil
- Turn the heat off just as it is about to froth over
- Immediately add the lemon juice and stir. The curds will separate from the whey immediately
- Leave for about 5 minutes till cool enough to handle
- Strain through cheese cloth or sieve
- Weigh meal portions of 100g – you should get about 2 portions from this quantity
- Serve cold
NOTE: The whey can be drunk as a beverage (a good source of protein for people who are vegetarian) OR used to poach fish or chicken.
