Skinny Chicken Waldorf


  • 100g lean Chicken breast
  • 2 Celery sticks, finely sliced
  • 1 red Apple, finely diced
  • 1 tsp Cardamom
  • 1 tsp Nutmeg
  • 1 Tbsp Chives, finely chopped
  • salt
  • pepper


  1. Lightly poach the chicken in a pan for 7 - 8 minutes
  2. Remove from heat and rest
  3. Put the sliced celery and diced apple in a mixing bowl together with lemon juice, cardamom, nutmeg, salt and pepper. Mix together thoroughly
  4. Tear the chicken into thin strips and mix into the salad
  5. Garnish with the chopped chives

NOTE: Celery can be substituted with Arugula
