Ingredients

1 cup densely packed Parsley

1 Tomato, finely diced

handful Mint leaves

1 Shallot

juice of ½ Lemon

salt

Method

  1. Chop parsley, mint and shallot in a kitchen whiz until fine
  2. In a bowel, toss the finely chopped parsley with the tomato and lemon juice
  3. Season with salt to taste
