Stir Fried Cucumber with Spicy Minced Chicken


  • 1 Cucumber, partially peeled to create alternating peeled and unpeeled stripes, seeded and cut on the bias 2 cm thick
  • 1/2 tsp salt

Marinade for the Chicken

  • 100g lean minced Chicken breast
  • 1 tsp Tamari or Braggs Liquid Aminos
  • juice of 1/2 Lemon

Sauce for the Stir Fry

  • 1 Tbsp Tamari OR Braggs Liquid Aminos
  • 1 red Chili, seeds removed and chopped
  • 2 Garlic cloves, peeled and thinly sliced


  1. Place the cucumber in a large bowl and add the salt. Mix and toss until the cucumbers start to release a little bit of water, about 1 minute. Let stand for 30 minutes
  2. Combine the minced chicken, Tamari and fish sauce in a small bowl. Mix well and refrigerate for 30 minutes
  3. Drain the cucumber. Rinse it under cold running water. Drain well then pat dry with paper towels
  4. Heat a Teflon pan. Spread the marinated chicken mince in the pan with a spatula so that it makes a thin layer. Cook it undisturbed for 30 seconds
  5. Using the spatula, break the mince into small pieces. Add the chili and continue cooking till golden brown. Transfer to a bowl and set aside
  6. Put the garlic in the same Teflon pan. Cook for about 30 seconds then add the cucumbers. Stir for 2 minutes then return the chicken mince to the pan and stir well
  7. Add the stir fry sauce and continue cooking and stirring until the cucumbers begin to look glossy, about 30 seconds.
  8. Serve hot
