100g white Fish fillet

1 red Onion, sliced in fine rings

50ml Skinny Fish Stock

1 Shallot, halved and sliced diagonally

½ tsp Lime zest

1 Tbsp Mint leaves, chopped

1/2 Grapefruit, peel and chop flesh




  1. Place the onion in a Teflon pan with a little Skinny Fish Stock. Cook till golden brown - about 10 minutes. Take off the heat and set aside
  2. Put the fish in a Teflon pan and a little Skinny Fish Stock. Cook both sides for 2 - 3 minutes then add the onion, shallot, mint, lime zest and grapefruit. Reduce the heat to low, close the lid and lightly simmer for 3 minutes or until cooked
  3. Serve
