Ingredients
10 Tomatoes
2 Garlic cloves, bruised
a few Basil leaves
salt
pepper
Method
- Cut ‘x’ in top and bottom of each tomato.
- Blanch tomatoes in boiling water 1 minute
- Remove and put in cold water. When skin starts to peel off at the cut ‘x’es, remove it and discard
- Cut tomatoes into pieces. Place in saucepan with garlic cloves and basil leaves and stew over medium heat till soft (about 10 minutes)
- Remove garlic and basil then put tomato stew through sieve to remove seeds
- Allow to cool then blitz in blender
- Separate into 5 equal portions
- Freeze
