Skinny Tomato Puree

This is the basis of many recipes. Prepare this in advance and you’ll be half way there.



10 Tomatoes

2 Garlic cloves, bruised

a few Basil leaves




  1. Cut ‘x’ in top and bottom of each tomato.
  2. Blanch tomatoes in boiling water 1 minute
  3. Remove and put in cold water. When skin starts to peel off at the cut ‘x’es, remove it and discard
  4. Cut tomatoes into pieces. Place in saucepan with garlic cloves and basil leaves and stew over medium heat till soft (about 10 minutes)
  5. Remove garlic and basil then put tomato stew through sieve to remove seeds
  6. Allow to cool then blitz in blender
  7. Separate into 5 equal portions
  8. Freeze
